Risotto - Handmade in the Heartland


We have a favorite dish- it's caled Risotto. I made it last night with yellow squash and asparagus, but my favorite is with butternut squash i use THIS recipe from Real Simple. It's a great recipe and i just substitute the squash with whatever veggie i want- the secret to the recipe is that you need to gradually put in each 1/2 cup of broth and stir and wait until it is completely absorbed until you add the next. It takes a bit of time but it is OH SO Tasty!

Yesterday i also made two quiche's so that i can eat them for breakfast throughout week. HERE is the basic quiche recipe and i add lots of things to it, the one i'm eating now has basil, potatoes, bacon, cheddar and swiss. It's also a great basic recipe. Enjoy!
