So yesterday i got my new issue of everyday food in the mail and one of the features is all about little dishes you can make in your cupcake/muffin pans. I was immediately drawn to the eggs dish because it reminded me so much of my favorite brunch dish "oven eggs" at my favorite brunch place in KC, Room 39. I had to try it, so yesterday at 3:00 pm when i was finally feeling up to getting off the couch i did, and it was delish to say the least. i changed the recipe- you can see it below. :)
Spray your muffin pan with non-stick spray. Use crescent roll dough to line the cup, add some Parmesan (or whatever cheese you prefer) then half-way done bacon, and then an egg.
Bake in the oven at 375 for about 20 minutes, until the white part of the egg is done, the yolk will be 1/2 way done. and then enjoy :)
