Super Saturday

Yesterday we had a Super Saturday event at church, it's a day where they have multiple different crafts to make and then lunch. I was asked to be in charge of lunch and it was a great distraction for me. I have been feeling like i was missing out not throwing any type of party this quarter (i like to get in at least 1) but i just haven't felt up to it. This was the perfect opportunity to get it out of my system, and i didn't have to do all the work alone! I just planned out the menu and then divided the recipes between a few others who were in charge of the day and we got it all done. I think it turned out fabulous, it was such a fun event.

We had three different tea sandwiches. Tomato, mozarella & basil on baguettes, cucumber with herb cream cheese and chicken salad on rolls. We had two salads- my dad's famous pasta salad and cornbred salad. The cornbred salad is a favorite of everyone but me- i knew it would be a hit so i made it, but i just have never liked it. Here is the recipe for those who wanted it:

Tennessee Cornbread Salad
make 1 box of cornbread mix to package instructions
crumble the cornbread and mix it with
1 small onion diced
2 medium tomatoes diced
1/3 cup diced celery
8 slices of bacon, cooked & crumbled
1 green bell pepper diced
mix all indredients together with just enough miracle whip to moisten ( i used about 3 spoon fulls)

For dessert we had THESE amazing pistachio raspberry tea cakes, THESE delicious zucchini cupcakes with cream cheese icing and then i took the opportunity to make my french macaroons again :) I also made my mother-in-laws fabulous orange scented chocolate fruit dip. it's seriously TO-DIE-FOR. Here is the recipe:

Vicki's Orange-Scented Chocolate Fruit Dip
Mix all ingredients in a kitchen aid with paddle attachment. Refrigerate until serve
1 small container of nutella
1 small container of marshmallow cream
1 cup heavy whipping cream
2- 8 oz. pkgs cream cheese
1/2 tsp of orange oil



My Dad's pasta salad
2 pkg of pasta
1 lb 1/2 inch thick cut salami- cut into cubes
1 block muenster cheese
1/2 block jack cheese
1 pkg cubed pepperoni
1 bottle Italian dressing
