So the count down has officially begun, one week from today we will be heading off to Europe and i'm so excited, a little annoyed with the recent high alert for terror attacks in Europe, but nonetheless very excited. Yesterday i spent all day sewing - i hate when i procrastinate- and so today i'm hibernating in my bedroom, atleast for the morning, planning the rest of the details to our trip and drinking my new favorite fall beverage, Kim's hot wassail. Simple to make and oh so delicious it's the perfect drink for when there is a little nip in the air like today, i decided i must share the recipe. Thanks kim for bringing this delicious treat into my life :)

Kim's Hot Wassail

In a large saucepan heat:

10 cups apple cider

2 cinnamon sticks

Bring to boil; reduce heat. Cover and simmer 5 minutes.

Uncover and stir in:

½ tsp. Nutmeg

1 tsp. Grated lemon peel

2/3 cup honey

4 tablespoons lemon juice

2 cups unsweetened pineapple juice


Simmer 5 minutes longer and serve hot.
