Girls Night Christmas Party 2010

Last night I held my annual girls night Christmas party and it was just as fun as the past two years. We had lots of delicious food and wonderful company, games and presents a plenty. I have everyone bring a $20 gift that they would enjoy receiving and then we play the white elephant gift exchange game and everyone goes home with something fun. The biggest question of the night was will there be another party next year with the new addition to our family and of course the answer is YES! just because i'm going to be a mom doesn't mean i'm giving up being a party hostess, its one of my favorite things to do. :) Here are some pictures from the party and the requested recipes.

For these salad cups my friend Mindy made the parmesan cups and i put a mix of greens, almonds, and craisins inside with balsamic vinegar.
I made two types of truffles- Peanut Butter & Oreo

Peanut Butter Dark Chocolate Truffles
mix until smooth 1 container of peanut butter with 1/2 cup milk & 1 lb of powdered sugar
Mix in one sleeve of Ritz crackers
Form dough into balls and dip into melted dark chocolate or milk chocolate, whichever you prefer
I usually melt one back of chocolate chips with 1/2 stick of butter, that way its more creamy & smooth

Oreo Truffles
Mix one package of crushed Oreos with 1 package of softened cream cheese
Form dough into balls and dip in melted dark chocolate

Rustic Pear Galette
peel, core & chop 4-5 pears
mix the pears with 2 tablespoons of lemon juice
1/8 tsp of nutmeg
3 tablespoons raw sugar
2 tablespoons sugar &
1 tablespoon melted butter
Unroll one pie crust and dump filling in the middle and fold the sides up
Brush the pie crust with an egg wash and Bake at 350 for 50 minutes



Raspberry Sparkling Punch
A 2 liter of Ginger Ale
3/4 cup of powdered lemonade mix
1 package of frozen raspberries
Spinach, Onion & Bacon Dip
Chop up 5 slices of bacon & cook till crisp, remove bacon from pan
Add one medium chopped yellow onion to pan and cook till translucent
season with S&P and add 1 teaspoon of flour and cook for 30 seconds
Add 2 packages of thawed chopped frozen spinach, 1 cup milk, 1/2 cup sour cream & 1 package of cream cheese. Cook until melted and combined.
Add Bacon & 1/4 cup of Parmesan
Transfer to a baking dish and top with 1/4 cup of Parmesan. Bake at 350 for 15 minutes or until bubbly.
Ham & Cheese Puff Tart

1 ½ tablespoons flour

2 sheets puff pastry

1 tablespoon unsalted butter

I cup whole milk

salt & pepper

ground nutmeg

6 oz thinly sliced deli ham

1 cup grated gruyere or fontina

½ cup grated swiss

1 large egg, lightly beaten

In a small saucepan melt butter over medium heat. Add flour, cook, stirring constantly until golden, about1 minute. Whisking constantly add milk and simmer until thickened about 5 minutes. Season with salt & pepper and a pinch of nutmeg. Pour sauce into a bowl and let cool for 30 minutes.

Preheat the oven to 400. On a floured work surface roll the puff pastry sheets out to be 10 x 13 inches. Place on a silicone mat or parchment paper.

On one of the puff pastry sheets spread sauce in a thick layer over entire surface, leaving a ¾ inch border. Layer ham on top of sauce and then the shredded cheese. Place the second puff pastry sheet on top and roll the edges of both the sheets of pastry together, toward the middle. Using a sharp knife cut vents across the top of the tart. Brush top and edges with egg.

Bake until browned and puffed, about 30 minutes. Serve warm or at room temperature.

After cooking for two days and then this morning volunteering from 9 to noon at a Christmas store for those in need i think i might have over done it a little. I've been so exhausted all day, but hopefully i'll be back to normal tomorrow since i have multiple etsy orders that need to be filled. Yay for the Holidays! :)
