Chocolate Chip Orange Muffins


So I'm pretty much in love with my demarle muffin tray.  It's like baking a whole new way- no spray or flour in the pan and the muffins or cupcakes or cakes or whatever you bake in them just pop right out, no sticking at all, i made cheesecakes and it was a miracle.  I want the entire line of bakeware- pronto.  Anyhow i made these orange muffins the other day and they were delish, so i thought i would share.

Chocolate Chip Orange Muffins
  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sour cream
  • 1/2 cup water
  • 1/4 cup olive oil
  • 2 tablespoons grated orange zest
  • 2 tablespoons fresh orange juice
  • 1 large egg, lightly beaten
  • 1 cup mini chocolate chips
  • 2 tablespoons turbinado sugar
  1. Preheat oven to 375° F. spray muffin tray, or line with liners, or not if you're using demarle :) 
  2. In a large bowl combine flour, sugar, baking powder and salt. Make a well in center of the mixture and set aside.
  3. In a medium bowl, combine sour cream, water, olive oil, orange zest, orange juice, and egg. Add wet mixture to the well in the flour mixture.  Add the chocolate chips. Stir just until moistened.
  4. Divide batter evenly among muffin cups. Sprinkle turbinado sugar over batter. Bake for 15-18 minutes, or until a toothpick inserted in center comes out clean. Cool 5 minutes.
