Lacey's Baby Shower

Yesterday i helped out with a shower for a friend of mine who just had twins! Our friend Tiffany  really is the one who deserves all the credit for this adorable shower, she hosted it and planned it and it was so cute.  It was a brunch and everything was just perfect.  Tiffany made adorable mini pancakes and strawberry skewers with buttermilk syrup, individual breakfast casseroles, and mini dounuts.  I made strawberry lemonade cupcakes and provided the yogurt bar.  I love how everything came together! 

Strawberry Lemonade Cupcakes

Lemonade Cupcakes
1 box white cake mix
1 cup flour
1 cup sugar
3/4 teaspoon salt
1 1/3 cup water
2 tablespoons oil
1 teaspoon vanilla
1 cup sour cream
4 egg whites
1/4 cup frozen lemonade concentrate, thawed
1 tablespoon lemon juice

Preheat the oven to 325.  Mix all the ingredients until smooth, combining the dry first and then adding wet.  Put into a cupcake liners and bake for 18-20 minutes.

Fresh Strawberry Icing

1/2 cup unsalted butter, room temp
1 lb container of strawberries
1/2 teaspoon fresh lemon juice
4 cups powdered sugar
1-2 tablespoons of whole milk

Put the strawberries in a small sauce pan and cook over medium heat stirring with a spoon until they break down into a sauce. Pour the sauce through a fine mesh strainer to eliminate the solid parts and then put the liquid sauce back in the pot and simmer until it reduces to a 1/4 cup of very concentrated strawberry sauce.  Set aside and let it come to room temp.  Cream the butter in a mixer and then add the strawberry sauce, 2 cups of the powdered sugar and lemon juice.  Mix until combined.  Add the rest of the sugar and depending on the stiffness add milk until it becomes the consistency you want.
