Last week i had the great opportunity to throw a baby shower for my wonderful friend Katie. She is having her 5th (!) baby, but her youngest is 8 so she has long since discarded her baby things and was in great need of a shower. Katie also moved a few hours away last June so it was a great reunion of sorts for all of her friends here in KC to celebrate the upcoming addition. I decided to go with a rain shower theme, since it is April and all... I loved how it turned out. I was a little rushed and didn't quite get all the details done that i had planned since we had gotten home from our spring vacation less than 48 hours before the shower. But here are some fun photos!
i put salads already tossed in dressing in small cups- it was our standard every night salad- romaine, craisins, avacado, blue cheese, almonds & Briana's honey mustard dressing. To go with my shower theme i cut out a lot of clouds and rain drops. I used my silhouette cameo and THIS shape set from the silhouette store. i cut out two of each cloud for the cupcake toppers and glue sticked them together with a toothpick in the middle. I also cut out clouds and did two whole punches and then stuck my cute stripe-y straws through them.
My friend Heather made her Ahhh-mazing sugar cookies, i may or may not have made myself a little sick by eating too many of them ;) She cut them out in umbrella's and rain drops! how cute! She uses THIS recipe
I also made THIS jalapeño & bacon cheese ball which was really good. I'm such a fan of that combination- bacon, cream cheese and jalapeño.
I didn't snap a picture but i made a really tasty blueberry lemonade. Here is the recipe:
mix all the ingredients together in a large container/drink canister
4 cups blueberry simple syrup
2 cups lemon juice, from fresh lemons
16 cups of water
4 or more cups of ice
Blueberry Simple Syrup
3 cups blueberries
3 cups water
3 cups sugar
Place all ingredients in a saucepan and bring to a boil. Reduce heat and simmer for 15-20 minutes, stirring to make sure the sugar dissolved. Strain the solution with a fine sieve and discard solids. Let cool and then mix with lemonade ingredients.
I made my favorite white cupcake recipe and blueberry buttercream frosting. I was a little disappointed with the icing. The blueberry simple syrup i made to mix into the frosting didn't have enough flavor that you could tell the icing was blueberry. I had made the same recipe with raspberries and it was very flavorful, but for some reason the blueberries weren't. The icing wasn't bad it just tasted like normal buttercream. regardless here is my favorite cupcake recipe:
1 (18.25 ounce) box white cake mix
1 cup all-purpose flour
1 cup granulated white sugar
3/4 teaspoon salt
1 1/3 cups water
2 Tablespoons vegetable or canola oil
1 teaspoon vanilla extract
1 cup sour cream
4 large egg whites
1. Preheat oven to 325°F. Place cupcake liners in cupcake pans (you'll
need approx. 36).
2. In a large bowl, whisk together cake mix, flour, sugar and salt.
Add remaining ingredients and beat with hand mixer for 2 minutes, or
until well blended.
3. Use ice cream scoop to fill prepared cupcake tins- fill about 3/4
full. Bake about 18 minutes, or until toothpick inserted in center
comes out clean.
We had such a good turnout these ladies are the ones who stayed right to the end, probably only about 1/2 of all who came.
