Here is a little pick me up for your wednesday. These cookies are so good, you must make them for your next football watch party or maybe to put in your kids’ lunches on a friday before the big game.  They do take a little bit longer than your normal cookie, but its worth it! You can make the icing whatever color you want, we made it red for the Kansas City but customize it to your own personal allegiance. 🙂

cookies:
2 boxes devils food cake mix
1 1/2 cups shortening 
4 eggs
1tsp vanilla 
Filling:
1 8oz. package of cream cheese- softened
1 stick butter- softened
1 lb (4 cups) powdered sugar
1 tsp vanilla
1 tablespoon milk
food coloring
white icing for the “laces”
Preheat the oven to 350. Make the cookies first, mix all the ingredients for the cookies together until combined.  Roll into tube like shapes about 2 inches long and 1/2″ thick, this is what will make the “football” oval shape. Bake for 9 minutes and let cool. 
Make the icing.  With the paddle attached on a stand mixer beat the cream cheese and butter until soft and smooth. Then add the powdered sugar, vanilla, and milk.  Here is an icing making tip- once you add the powdered sugar never go above the first, slowest speed.  Over mixing icing is the #1 reason people ruin icing.  Add the food coloring if you want when you add the powdered sugar. 
Once the cookies have cooled sandwich together with a big dollop of the icing in the middle, and then take some white icing and make the “laces” on top.
