Ok so i have to admit i was skeptical about how these little guys would actually taste in hot chocolate, like if the crushed peppermint would end up being a mess at the bottom of the cup or something like that, and i am so please to report that they are delicious. Last week i helped put together a cookie exchange for the women at our church, i shared the cookies that i took last week and now i'm sharing our hot chocolate bar. It was a freezing night so the hot chocolate bar was a hit! These marshmallows add just the perfect amount of peppermint and as the marshmallow melts it adds even more chocolate and then not to mention an ooey-gooey marshmallow to bite into. You could package these up as gifts or stick them out at a party like we did, i think they would be great little snacks even with out the hot drink.
Large Marshmallows (i got the extra large size, like even bigger than normal large size)
Chocolate Almond Bar (melting chocolate)
Straws (i used striped paper straws as well as coffee stir sticks)
First put your peppermints in a ziploc bag and using a hammer smash them up into bits. The smaller the bits the better because larger chunks wont adhere very well to the chocolate.
Melt the almond bark or melting chocolate, stick the straw deep down into the marshmallow (i stuck mine until i could feel it almost poking through the other side). Dip the marshmallow in the chocolate and then using a spatula smooth it out and get rid of any excess chocolate. Then using a spoon sprinkle the dipped chocolate marshmallow with your crushed up peppermints.
Let them harden on a silpat or parchment paper. (Read all about why I love my Silpat HERE) You can chill them in the fridge, but i didn't, leaving them on the counter to firm up worked great.
