I love a good trifle, especially in the summer when I crave a fresh and light dessert. Normally I just make some fresh whipped cream to go into trifles but I got creative and made this cream layer with marscarpone.  I don’t think I’ll ever make plain whipped cream again. Seriously marscarpone is like a secret weapon that I have not been using, SO good! So although this post is about a trifle the true recipe to take away and start using whenever you feel like it is the marscarpone whipped cream. Top your pancakes or chocolate cake or anything else you can think of with it! Its just as easy to make as the plain old stuff- just whisk it up in your mixer and you’re done.

So you can obviously make your own angel food cake, and normally I totally would, but sometimes you just need a “mostly” homemade quick and easy dish.  This one comes together super fast and is perfect for when you have to run to a get together, picnic or bbq.  Enjoy!

Ingredients
  • 1 angel food cake
  • 1 container strawberries
  • 1 container blueberries
  • 1 8oz container marscarpone cheese
  • 1 cup + 3 tablespoons heavy cream
  • 1/2 cup sugar
Instructions
In a stand mixer with the whisk attachment mix the heavy cream, marscarpone & sugar until it is light and fluffy. It should get to the consistency you want after about 5-10 minutes of mixing on medium to high speed.
Assemble the trifle by layering cut up pieces of angel food cake, then a layer of the cream, a layer of cut up berries and then repeat. If you want to add another layer of sweet mix the berries with some sugar and set aside before putting into the trifle. I also used a pastry bag to fill the trifle so that it looked pretty. 🙂
