I'm kind of in love with juicing. I borrowed my friends juicer last summer and totally loved it. I returned hers and because I loved it so much I bought the exact same one- this Cuisinart Juice Extractor. It's easy to use, easy to clean and makes really great, smooth, pulp free juice. I've been on a mission for a while to get more fruits and especially veggies into my diet and juicing is a great way to do that. This recipe for what I'm calling "green goddess juice" is a great beginner juice. Its delicious and sweet and you wont even feel like you are drinking veggies.
I feel so good when I start out my day with some type of veggie and not just sugary carbs, don't you? What is your favorite healthy breakfast? We like juice, smoothies, eggs with veggies and quiches. I wish I was more disciplined and made a good healthy breakfast everyday. I love my sweet potato breakfast hash and these egg quinoa cups both are totally filling breakfasts.
Green Goddess Juice
Ingredients (makes about 3 cups of Juice)
- 1 Pineapple, peeled & cored
- 1 Mango, peeled & pit removed
- 2 oranges, peeled
- 1 cucumber
- 1 8oz bag of spinach
- Prep all your ingredients by removing peels, pits and cores. Process through your juice extractor and Enjoy!
- I like to keep my juice in an air tight container in the fridge for a few days if I don't drink it immediately.

This girl. My 3 year old is a really unique little girl, she is super strong willed, determined and stubborn. Those attributes make her pretty difficult to parent, however I have been trying to see the good in those personality traits. One of the things that she does that is so super amazing is her ability to focus on a task until she completes it- stubborn and determined. She is a puzzle master. I realized it when we came home from target a few months ago and we had purchased a 48 piece Elsa puzzle in the dollar spot. We came home and as I unloaded groceries she put the entire puzzle together without any help in like 45 minutes. She methodically moved each piece around until she found the right piece for each space. I was super impressed. So a few days ago I bought her these 4 Frozen 60 piece puzzles and between yesterday and today she did them all, on her own. If you have any advice for parenting super strong-willed children please leave a comment or link to an article. I can use all the help I can get. :)
