Strawberry Lemonade Popsicles

Last summer I purchased my popsicle mold and much to my kids’ dismay I did not make many popsicles. Bad mom. I’m kicking this summer off right with these strawberry lemonade popsicles. Guys, they are delicious. They are simple, only 3 ingredients, and my kids have been loving them!

I purchased my strawberries and Simply Lemonade from Sam’s Club, do you shop there? I’m a huge fan of their produce – it’s always in really good shape and at a great price. We go through like 4 pounds of strawberries a week. It’s one of the only foods my daughter will eat, so buying them in the 2lb containers at Sam’s is a no-brainer.
I love spring and summer. I love watching my kids play outside and pretend with each other, it never fails that once they are hot they come in hunting for a nice cold treat. These popsicles are their new favorite thing; I’m pretty sure we’ve all had one a day for the last week! Sam’s and Coca-Cola are hosting a 100 Ways to Summer sweepstakes! This simple recipe for strawberry lemonade popsicles is going to be a hit at your house all summer long

Ingredients:

  • 1 cup Simply Lemonade ®
  • 2 lbs strawberries
  • 2 tablespoons honey
Instructions:

 

    1. Wash & trim strawberries. Place in a blender with 1 cup of lemonade & 1-2 tablespoons of honey. Blend until pureed.

 

    1. For a layered effect fill up 1/4 on each of your popsicle molds with the strawberry puree and freeze for about an hour. Fill each mold 3/4 of the way full with lemonade. Freeze for an hour. Fill the last quarter of the popsicle with strawberry puree, stick in popsicle sticks and freeze until completely solid, several hours.
    2. To unmold you can set the popsicles out for a few minutes, or if you are impatient like me run the mold under warm water for a few seconds and they will pop out.
