The weather is getting chilly here in KC and i love it. Today Matt and Max get back in town from vacation and i’m taking the kids to Carolyn’s pumpkin patch this afternoon. Carolyn’s is free on Tuesday and Wednesday from 4-6pm and its pretty darn cute, honestly i just want a pumpkin donut because they make the best ones ever there. So anyway we are totally in the fall spirit here at the Muir home and so today i have some great halloween party food for you. If you saw the KCLive segment i did i showed hummus with carrot fingers then and so today i have the recipe for you. I also made these adorable carrot & olive eyeballs, are they not adorable?!
Fresh Made Hummus:
2 cans chickpeas
1 clove garlic
2-3 tablespoons olive oil
up to 1/2 cup water- divided
1/2 tsp of salt
The key to making great hummus is removing the skins from the chickpeas. Did you even know that chickpeas had skins? i didn’t until i did my research and yes if you dump the can out, drain them and then just lightly pinch them the skins will pop right off. It’s tedious, but makes all the difference in truly silky smooth hummus and not so much. So toss your peeled chickpeas into a blender or food processor with all the ingredients and 1/4 cup of water, process until smooth. I needed to add the full 1/2 cup to get the consistency i wanted, you can judge what yours needs. Serve with veggies & pita chips.
Carrot Eyeballs & Hand:
carrots, cream cheese & black olives
Peel your carrots and cut them into 1-2″ pieces. Spread a dollop of cream cheese on the cut side and then top with 1/2 of a black olive. Serve and enjoy all the compliments on how creative you are 🙂
For the carrot hand just peel 5 carrots, cut the bottoms at different lengths so they look like the length of fingers. Take icing to attach sliced almonds as fingernails. If your hummus is deep enough you should just be able to stick them into the hummus and they will stand up, if your dish is shallow, like the one pictured here you can do as we did and use melted chocolate like a glue to stick to the bottom of the carrots to the dish.
