If there is one thing that i missed out on during my college years its was cheering for college athletic teams. Now don’t get me wrong i’ll take living in New England and going to an art museum any day over watching a football game, but its just something i missed out on. Growing up in TN you would think i would have become a volunteer fan, everyone else was, but i wouldn’t be caught dead in that hideous orange. So when i married Matt i adopted his alma mater, BYU, I even went to a football game with him once. I kind of like having a “team” even if i didn’t go to school there… All this to say that last night we had some other BYU fans over to watch the game against the big rival the Utes. We won’t talk about the actual game, because well that just upsets Matt, but the food and friends were quite fun. 🙂
Mix all ingredients together and then roll into little tube looking pieces (see pic)
Bake at 350 for 8-9 minutes. Let cool and then frost one cookie and put one on top for sandwich cookie effect.
Cream Cheese Icing
1pound (2 8ounce packages) cream cheese, softened slightly, cut into
1/2 cup (1 stick) unsalted butter, softened slightly, cut into small pieces
1 1/2 teaspoons vanilla extract
5 cups confectioners’ sugar
in a medium-size bowl, on the medium speed of an electric mixer, beat
the cream cheese and the butter until smooth, about 3 minutes. Add
the vanilla extract. Gradually add the sugar and beat until well
incorporated. Add your teams color food coloring!
