Guilt-Free Chocolate Chip Pancakes
So i’ve been a lazy mom lately. After spending a fun week in Nashville i made a promise to myself to start cooking good food for Mr.Max again. I think we all go through our ups and downs of trying to eat right, cook right, etc. So i’m back on the bandwagon and this morning i made these delicious pancakes. I got the recipe from one of my favorite cookbooks- the Sneak Chef. I added oats, because i like oats. Here is the recipe. Your kids won’t even realize they don’t have sugar in them!
Sneaky Chef Chocolate Chip Pancakes
1/4 cup wheat germ
1/4 cup all purpose flour
1/4 cup whole wheat flour
1/4 cup oats
1/4 cup ground almonds (i threw them in my blender)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup applesauce
1/4 cup plain yogurt
1 teaspoon pure vanilla extract
2 1/2 tablespoons milk
1 large egg
2 tablespoons honey
1/4 cup mini chocolate chips
Mix all the ingredients and cook like normal pancakes 🙂 I used a tablespoon to scoop them out to make little silver dollar size one for the little man’s little hands. He was a fan.
