Good thing because I might have to hate you if you were enjoying 85 degree weather in January. How on earth do we beat the winter blues friends? As much as I try I just can’t turn the snow on the ground outside into sand, so here’s the next best thing, enjoy some seafood and pretend your eating it on a patio outside in the sun listening to the ocean…
This recipe for Jumbo Butterfly Shrimp zucchini noodle pasta is deee-licious. The sauce is a little bit indulgent, a full flavor alfredo sauce with sun dried tomatoes however, when you pour it over zucchini noodles you totally feel like you’re keeping all your new years resolutions. About a year ago we purchased a smaller as seen on tv spiralizer and then just last week I upgraded and got a fancier one.  I love using vegetables as the “noodles” in recipes, it tremendously cuts the calories down and with milder tasting veggies like zucchinis you don’t even really taste a difference.  Eating vegetables at every meal is one of my goals for 2016 and this is one easy way to do it!

It is not a lot but I still don’t usually get the recommended amount. SeaPak makes eating seafood as easy as it can possibly be.

For this recipe I used their Jumbo Butterfly Shrimp and baked them according to package directions while I was cooking the alfredo sauce, when the sauce was done I tossed the zucchini noodles in the sauce and then popped the shrimp on top. so easy.

Jumbo Butterfly Shrimp Zucchini Noodle Pasta

Ingredients
  • 3 tablespoons of butter
  • 2 tablespoons flour
  • 2 cups of milk
  • 4 ounces cream cheese
  • 3/4 cup parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 tsp salt & pepper
  • 1/2 cup chopped sun dried tomatoes
  • 1 8oz can tomato sauce
  • 2 large zucchini’s spiralized into noodles
  • 1 package SeaPak Jumbo Butterfly Shrimp
Instructions
  1. Melt the butter in a saucepan on medium-low heat. Once melted, whisk in the flour. Gradually add milk, whisking to combine as you go. I generally add it about 1/2 cup at a time, whisk, then wait for the milk to heat up and thicken a bit before adding more. Once all the milk has been added and it’s hot {do not boil!} add the cream cheese, garlic powder and s&p. Whisk until the cream cheese has melted and its all combined. Add the parmesan cheese, sun dried tomatoes and tomato sauce. Simmer this until all is melted, and mixed well.
  2. While the sauce is cooking put the shrimp in the oven and bake according to package directions.
  3. Toss the zucchini noodles with the finished sauce and top with shrimp. Enjoy immediately!
