Max’s Penguin Party
Yesterday we celebrated Max’s birthday here in KC with friends and family who came in town. I hope everyone who came had a good time, we were a little overwhelmed with trying to come up with what to do at a party with 1 year olds 🙂 but it was fun. Here are some photos and recipes from the big day.
These cupcakes are seriously the best white cake i have ever made, and the milk chocolate icing is divine. i actually posted the icing a while ago, you can see the recipe in THIS post.
1 (18.25 ounce) box white cake mix
1 cup all-purpose flour
1 cup granulated white sugar
3/4 teaspoon salt
1 1/3 cups water
2 Tablespoons vegetable or canola oil
1 teaspoon vanilla extract
1 cup sour cream
4 large egg whites
1. Preheat oven to 325°F. Place cupcake liners in cupcake pans (you’ll
need approx. 36).
2. In a large bowl, whisk together cake mix, flour, sugar and salt.
Add remaining ingredients and beat with hand mixer for 2 minutes, or
until well blended.
3. Use ice cream scoop to fill prepared cupcake tins- fill about 3/4
full. Bake about 18 minutes, or until toothpick inserted in center
comes out clean.
i made THESE southwestern eggrolls and avacado dipping sauce. However the recipe says to bake them, don’t. Fry them in a pot of oil over med-high heat. they are SO much better- i baked them the first time and they were gross. this recipe reminds me a lot of the eggrolls at chilis and i love those!
Those potato rounds are super easy, just cut up potatoes into 1/2″ slices, brush with butter and bake at 400 for 30 minutes. Take them out, make sure they are cooked and sprinkle cheese and green onions on top. Put back in oven for a few minutes until cheese melts and then put bacon on after.

Below i made these little thank you cards to attach to the favor bags- we did bubbles for favors.
And here is our very own little penguin. The poor guy was actually pretty sick for his party- we went to the doctor right before and found out he had a pretty bad ear infection, but the party goes on… 🙂 Doesn’t he just look adorable?! and you can also kind of see in the background that dad matches him 🙂
