Happy Labor Day! Every year by the time labor day rolls around i am completely ready for fall, how about you? I love a good holiday weekend, and our are usually accompanied by a bbq with friends to celebrate and tonight is no exception.  This recipe comes from my mom, its delicious and makes a ton so its ideal to take to big get together, however i have been known to make it just for our family and it still seems to disappear within a week.  I hope you all enjoy your holiday with good food and friends.

Frog Eye Salad
Frog Eye Salad
1 16-ounce pkg of Acini de Pepe Pasta (picture above, found in most grocery stores)
1 cup sugar
2 tablespoons flour
1 tsp. lemon juice
1 2/3 cup pineapple juices (from draining fruit below)
2 eggs beaten
2 cups mini marshmallows
3 small cans or 2 large of mandarin oranges, drained
2 16oz cans of crushed pineapple, drained and reserve juices
1 12oz container of cool whip, softened
1 cup coconut
1.Cook pasta according to package directions.
2.Make the sauce: Mix flour and sugar in a medium saucepan and then add lemon juice, pineapple juice, and beaten eggs.  Cook all ingredients over medium heat until thickened, stirring constantly.  Cool to room temperature.  Combine with cooked pasta and put in the fridge to chill.
3. After pasta and sauce are cool combine them with the rest of the ingredients in a very large bowl. Chill for at least a few hours before serving.  Makes 20 1-cup servings.
