Back to school is only weeks away and I’ve been brainstorming breakfast ideas.  These morning glory muffins are delicious and packed with good stuff for your body.  Stuffed into these babies are shredded carrots and apples, shaved coconut, crushed pineapple, craisins and whole wheat! As you can see I used my lovely Demarle charlotte mold to make them, have you seen a cuter shaped muffin before? I think not! I have always believed that eating a good breakfast is key to having a productive day and lately breakfast has fallen to the back burner, I was reminded of my long held belief when I had an extremely embarrassing moment last week.  You want to hear it? Its a good laugh.  So I met this guy at our neighborhood pool when I was there with the kids and he said he was a trainer and trained people at the Y, where we are members.  I have been wanting to train more seriously to tone up that ugly baby weight thats been lingering around so I decided to give him a go.  The  night before I had eaten a light dinner of just salmon and a few veggies and then that morning before heading out the door to the gym I downed a green smoothie.  Oh boy. Lets just say after 1 round of intervals I was literally laying on the ground feeling like I was going to pass out- I had to have the trainer go get applesauce and fruit snacks out of my diaper bag. Did I mention it was my first day with him! Now I’m not in fantastic shape but 2 days later I made it through the entire workout, I only almost passed out because I hadn’t eaten breakfast, but he didn’t know that! As I was laying on the floor he looked worried and said “I think we need to do a full consultation where you give me your medical history” ha! So basically eat breakfast. Its a good thing. 🙂

Ingredients (12 muffins)
  • 1 1/2 cups whole wheat flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 eggs
  • 1 tsp vanilla
  • 1 fuji apple shredded
  • 1/2 cup craisins
  • 1/2 cup shredded carrot
  • 1/2 cup shaved unsweetened coconut
  • 1 8oz can crushed pineapple, drained
Instructions
Preheat your oven to 350. In a stand mixer with the paddle attachment mix together your shredded carrots, shredded apple, sugars, salt, soda, cinnamon, vanilla, craisins, coconut and pineapple. After fully mixed add your eggs and mix until combined. Last add your flour and mix until combined.
Scoop about 1/3 cup into the wells of your flexipan mold or muffin tray and bake for 18-20 minutes. Let cool for a few minutes and then serve, Enjoy!
