Well friends it is officially fall.  Lets all bust out the pumpkins and fall wreaths and start snacking on this awesome popcorn! I’m totally a snacker, sometimes I wonder if I would loose weight if I worked outside the home and didn’t pass through my kitchen a million times a day, my guess is probably.  It helps to have lower calorie options when snacking, especially since I like to pile on more calories on top of what the base of the snack already is. 😉 Skinnygirl came out with a new line of popcorn this month with two flavors- butter sea salt and lime & salt. I new I would love the butter and sea salt, because its a standard but I was surprised at how flavorful the Lime version is and how much I liked it.  To make it even better I paired the lime & salt with a spiced mexican chocolate sauce I made and its a delicious combo! Every Skinnygirl product offers at least a 20% calorie savings vs. it’s competitors has no artificial flavors, no artificial colors, no artificial sweeteners (e.g. aspartame, sucralose) and no high fructose corn syrup. Even with all those factors the popcorn is just as good as other popcorns I’ve had and like I mentioned the flavor of the lime is great.  I found skinnygirl popcorn at walmart in the aisle with all the other popcorn and chips.

Lets talk about combos for second.  Clearly this popcorn is good enough to eat by itself, but if you are having a party or really have a hankering for something sweet, having a popcorn snack with toppings will hit the spot, I promise! If you’ve been reading my blog for any time at all you know that i’m a sucker for this caramel sauce recipe and I’ve been putting it on everything from apple pie to banana spring rolls, so I’m sure it is no surprise that I’m drizzling it on this skinnygirl butter popcorn! One of my favorite combos is the butter popcorn with candy corn, peanuts, mini Reese’s pieces and then drizzled with caramel sauce. oh man. yum.

When I was making these fun combinations and imagining using this whole set up at a party I thought it would be great for a Halloween party! If I were serving this at a party on halloween night, which I think would be a great idea I would have brown paper bags and parents could make their combos and then carry it with them as they supervise kids going door to door for trick or treating.

Spiced Mexican Chocolate Sauce

Ingredients 
  • 1/2 cup heavy cream
  • 3/4 cup dark chocolate chips
  • 1/2 tsp ancho chili powder
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
Instructions
In a medium to small saucepan bring the heavy cream to a simmer over medium-high heat. Add in the cinnamon, vanilla and chili powder while its heating up.
Once the cream is starting to bubble and boil remove it from the heat and add the chocolate chips. Whisk until the chocolate melts and becomes nice and smooth.
