Super Bowl Party Food

So the super bowl is this Sunday, and up until I was writing this post I didn't even know what teams were playing- that shows you how much I care about the actual game. :) But give me an excuse to throw a party and i'm all over it. When coming up with this super bowl party food menu I wanted to give you recipes that are tasty and very easy. I like to throw in the cute factor as you'll see, but really all of these items can be prepared in just an hour or maybe hour and half and be ready for your party guests to enjoy.

Lets start with my favorite item at the party- the mini stacked football blt's. These are super simple, the only thing out of the ordinary that you will need is a football shaped cookie cutter. I got mine at Michael's in the cake section in a package of 4 that came with a helmet and the football and 2 other shapes that were football themed. 



So to prep you'll want to cook your bacon, I cooked up enough to put 1/3 of a slice on each layer of the sandwich- so 2 per sandwich. You'll also want to cook an extra piece to cut up for the laces on the top of the football. Slice your tomatoes thin and then in half so you have half moon shapes, and cut your lettuce into small pieces. For the bread I used white italian bread so it was nice and thick and didn't squish when I cut it with the cookie cutter. When you are ready to assemble cut out 3 football bread shapes for each sandwich you want to make, I was able to get 2 shapes out of each slice of bread. Then spread mayo over one side of each slice, layer your piece of bread, lettuce, bacon, tomato, bread, lettuce bacon, tomato, and bread. Dress it up by using some spicy mayo or other condiments. Add your “laces” to the top by cutting thin small strips of cooked bacon. I didn't attach the bacon with any type of condiment so if you move the sandwich it will fall off, so really its just for the “cute” factor, i'm guess you could use mayo and they might stay a little longer.

Apricot Kielbasa Bites

A great little snack that people will devour are these sweet apricot kielbasa bites. These are super simple, you can pile all the ingredients into your slow cooker 3-4 hours before the party on low or you can have it all simmer on the stove for about 20-30 minutes. All you need to do is cut up 1 package of kielbasa sausages into 1” or smaller pieces, put them into the pot or slow cooker with 1 cup apricot preserves, 1/2 cup maple syrup, and 2 teaspoons of apple juice.

Mexican Tortilla Cups

These tortilla cups are super easy. Just take a small flour tortilla and press the center down into your muffin tray, you will see the sides begin to fold over each other and then mold to the shape of the muffin tray. Bake them at 350 for 10 or so minutes, until they are as crispy as you want them. You can load these with taco meat, salsa, and cheese- really any thing that you can think of that you would want in a taco shell! Be creative :)

Who doesn't love a good little slider on a sweet hawaiian roll? Seriously, the perfect game day food. Since I was making so many other items for this party I cheated and bought already made pulled pork, sometimes thats just what needs to happen, agreed? If you make your own i'm sure it will be wonderful, but if you want to save a lot of time, pick up pulled pork at your grocery store or at your favorite bbq restaurant (a lot of bbq joints will sell you just the meat by the quart), grab some hawaiian rolls and coleslaw. You can have it all seperate so guests can make their own sandwich or prepare them just before the party starts so they don't get too soggy.

Fresh Veggie and Dip Cup

Have you ever seen a better way to display and serve veggies and dip? I am loving this because its so easy for guests to just grab a cup and snack on something healthy while they are enjoying the big game. Just cut your veggies into taller “sticks”, add some ranch dressing or whatever veggie dip you are using to the bottom of the cup and them pop in your veggies. I like to keep an extra plate of veggies out as well so that people can grab more if they wish.

Like I said, I'm really not invested in this game at all, but I do enjoy having friends over for any occasion.
