The cleanse is over, if you didn't gather that from the photo above. Hold the judgement just a second, i'm still green smoothie-ing it up every morning for breakfast, eating salads and healthy all veggie meals for lunch and skipping the candy and sugary snacks for apples with almond butter, but dinner is another story. I'm still going to try to do all veggie meals twice a week, but lets be honest yesterday i was craving some cheese. Oh cheese, sweet melty cheese. This sandwich is a super easy, super fast, kind of cop-out dinner but it feels ok because you add broccoli to it. :) Need a quick dinner idea, this broccoli, turkey and white cheddar grilled cheese sandwich is calling your name.
Broccoli, Turkey & White Cheddar Grilled Cheese Sandwich
put a spin on the traditional grilled cheese by adding roasted broccoli and turkey, who doesn't love the classic combo of broccoli and cheese?!
4 slices of bread
1/2 a head of broccoli
1/2 cup white cheddar (shredded)
thinly sliced turkey
sliced mild cheddar
Preheat your oven to 400. Toss the broccoli, chopped into small pieces, with olive oil and salt and pepper and place on a baking sheet. Roast for 15 minutes.
Assemble the sandwiches. Butter one side of each piece of bread, buttered side down build your sandwich. Layer bread, sliced cheese, shredded cheese, roasted broccoli, turkey, shredded cheese, sliced cheese, bread.
Over medium heat "grill" your sandwich until the cheese is melty. Enjoy!
