It’s Christmas time and all I want to eat are cookies. Cookies all day, errrrday. I started a new routine where I’m getting up at 5:15 and doing a workout at home. I worked out 4 times last week, which is a total win, and I didn’t gain any weight, which is also a win because I’m eating way too many sweets every day! I figure if I can just not gain any weight in December I’m going to be totally happy! ha!
I love making cookies that are different, that my friends may not be getting on every plate of cookies that is delivered to them. I love a hint of peppermint with my chocolate and to give this cookie that hint I crushed up peppermints and sprinkled them on top. I used these same crushed peppermint pieces for my Peppermint Hot Chocolate Straws which are really fun for a Christmas party!

Chocolate Peppermint Pudding Cookies

This recipe for Chocolate Peppermint Pudding cookies is an easy Christmas cookie to make for gifting or parties, It’s easy, delicious and the perfect Christmas combination!
Ingredients:
- 1 cup butter
- ¾ c brown sugar
- ¼ c white sugar
- 1 (4 oz) pkg instant chocolate pudding mix
- 2 large eggs
- 2¼ c flour
- 1 tsp baking soda
- 1 (12 oz) pkg chocolate chips
- 1 Recipe of Buttercream Frosting
- 1 bag peppermints, unwrapped & crushed
Instructions:
- Preheat the Oven to 375. Cream the butter and sugar together and beat until fluffy. Add the eggs and pudding mix, beat until smooth and creamy. Add the baking soda and then the flour and mix until combined. Last mix in the chocolate chips.
- Scoop out dough into 1″ balls onto silpat lined baking sheet and bake 8-10 minutes.
- Remove from oven and let cool. Frost with vanilla buttercream frosting and top with crushed peppermint pieces.
- To crush peppermints I put mine in a ziplock bag and take a small hammer to them.
