Tomatoes are still ripe and delicious here in Missouri! Last week I had a party and served some delicious heirloom tomato bruschetta. I picked these gorgeous tomatoes up at the farmer market, always a fun shopping experience. The Kansas City city market is one of my favorite places here, on the weekend during spring, summer, and fall its full of local farmer selling delicious and beautiful produce and other vendors selling homemade cookies, fudge and art. This bruschetta is the perfect way to celebrate the end of summer, its only a few simple ingredients and tastes delicious!
I love the colors and varieties of heirloom tomatoes per wikipedia it says “Heirloom tomatoes lack a genetic mutation that gives tomatoes an appealing uniform red color while sacrificing the fruit’s sweet taste.” So there you have it, heirlooms are most often sweeter than regular reds.
Heirloom Tomato Bruschetta:
To make this bruschetta all I did was take a handful (maybe 10 leaves) of fresh basil from my herb garden and slice it thin. Then chop 2-3 tomatoes, depending on how large and how much bruschetta you’re wanting to make and add fresh mozzarella pearls to the chopped tomatoes. Toss with a little salt and pepper and then add the basil. I used a french baguette cut into 1/2-3/4″ slices and toasted them in the oven for about 8 minutes. Place your tomato mixture on top of the toasted piece of bread and then drizzle with high quality balsamic vinegar. Yum!
I love to enjoy these for a light lunch or appetizer before dinner. They would also be great to take to your neighborhood bbq, just don’t assemble them till you get there because the bread will get soggy, even if its toasted.
