We love asian food at our house and after going to a fun asian restaurant a few weekends ago I was determined to find and make an udon noodle dish. After searching my local grocery store and coming up empty I ordered udon noodles on amazon, but then I was at Walmart and found them for only $3! They are kind of interesting noodles- they come fully cooked and all you have to do is heat them up in your pan with your sauce and separate them with a spoon. This sauce friends is seriously ahhhmazeballs, like one of my favorite new dishes that I could probably eat once a week. Its sweet with lots of flavor and just a tiny bit of kick. You should totally whip up this sweet thai udon noodle recipe this week- get on it!
If you can’t find udon noodles use rice stick noodles. Just cook them according to the package directions and toss them in just like the recipe says to with the udon noodles. Actually the first time I made this recipe I used rice stick noodles (they are the noodles you typically use for pad thai) and they worked great.
Using fresh ginger and shallots adds a lot of flavor to this freaking delicious sauce, I love that this dish is vegetarian and full of a variety of veggies. You can use any veggies that you like, buy a stir-fry pack at your grocery store to make it easy or just grab your favorites for asian dishes. Its totally up to you. You could very easily add in some cooked chicken or beef to the dish too, however I don’t really think it needs it.
So below are the two ingredients in this dish you might not be familiar with, the udon noodles and the sweet chili sauce. I found both of these at Walmart, the sweet chili sauce is kind of the key ingredient in the sauce so if you leave it out I’m not sure how it would taste- so just go to the asian section and grab some.
Here is the sauce simmering on the stove- this picture make it look like its in a huge pot but its not, its just a medium saucepan. I would guess that you end up with between 1-2 cups of sauce.

Sweet Thai Udon Noodles

For the Sauce
1 shallot, diced small
1 tablespoon fresh ginger, diced small
2 tablespoons red curry paste
1 can coconut milk
3 tablespoons sugar
2 tablespoons thai chili sauce
2 tablespoons soy sauce
For the Dish
1 tablespoon oil (i like using sesame oil for asian dishes)
1 package udon stir-fry noodles
1-2 bell peppers
1 head broccoli
1-2 medium carrots
1 cup snap peas
1/4 cup green onions, sliced
First make the sauce, in a medium to small saucepan saute the shallot & ginger in a little oil for several minutes. Add the red curry paste and cook a few minutes, then add the rest of the ingredients and let simmer for 15 or so minutes, I just let it simmer until my veggies are ready.
Meanwhile heat a tablespoon of oil over medium heat in large skillet or wok, add your veggies. You can really use any combination of veggies that you like here, make it easy on yourself and buy a stir-fry pack at the grocery or just pick what you like for asian dishes and throw it all in. I like to cover my veggies and let them cook for 4-5 minutes in the beginning to speed up the cooking process. Once your veggies are soft enough to your liking open up your noodles and add your noodles and sauce to the pan with the veggies. Stir everything and cook for a few minutes, just to make sure the noodles are heated through. Serve and top with sliced green onions. Enjoy!
