Sweet Potato Sliders

This recipe is a great meatless alternative to burgers, sweet potato sliders are delicious and healthy!

I’m a huge fan of sweet potatoes, one of my favorite vegetables, and these sweet potato sliders are delicious! Did you know that sweet potatoes are rich in beta-carotene, which is transformed into vitamin A in the body. One sweet potato contains 3x’s the amount of vitamin A that we need in a day, awesome! So to get your daily dose of vitamin A whip these puppies up and enjoy them with my favorite watermelon lemonade, a perfect summer dinner!

Even though I’m not a vegetarian I try to cook 1-2 vegetarian meals a week. First of all meat is expensive so it keeps my budget down a bit and second it’s just good to eat more plants. I’ve noticed when I eat a meatless meal I end up consuming a lot more vegetables to fill me up. That increase in good old fashioned veggie nutrients is sure to benefit my body.

I cook vegetables 2 ways- 1st is to roast them in the oven on my Silpat, 2nd is stovetop in my Kitchen Charm by Dinner4Two waterless greaseless cookware.  I tend to do more roasting in the fall & winter and more stovetop cooking in the spring, summer.  I have a gas oven/range and my oven heats up the entire main floor, so naturally when It’s 95 degrees outside I don’t want to heat up my house.  My cookware is awesome because it allows me to cook veggies with a minimal amount of water which means retaining nutrients instead of loosing them in a pot full of water. Making these sliders is pretty simple. I added all the ingredients to the bowl of my stand mixer and used my paddle attachment to “mash” everything together.  I would recommend stopping before it gets to the consistency of mashed potatoes.  I would have preferred more chunks in my slider. Because I mashed mine to a super smooth consistency biting into the slider wasn’t as satisfying, it was really soft instead of having a thicker bite.

Once you make the patties you’ll pan fry them in coconut oil for a few minutes to get them nice and golden brown.

I served mine on Hawaiian rolls with slices of avocado, chopped cilantro and garlic aioli.  Never underestimate the power of a good condiment. Seriously that garlic aioli is bomb.com friends!

This recipe is a great meatless alternative to burgers, sweet potato sliders are delicious and healthy!

Ingredients:

  • 1 medium sweet potato
  • 1/2 cup drained/rinsed canned cannelini beans
  • 2-3 tbsp flour
  • 1 tbsp tahini
  • 1 tsp pure maple syrup or agave syrup
  • 1/4 tsp garlic powder
  • Pinch of salt, pepper
  • Optional, small pinch of red pepper flakes, if spicy is desired
  • 2 TBL coconut oil
  • 10 Hawaiian rolls
  • 1/2 cup cilantro, lightly chopped
  • 1-2 avocados, sliced
  • 1 recipe of Garlic Aioli
Instructions:
  1. Peel, dice, and cook sweet potato until soft all the way through. You can boil, bake or roast them. I love my Kitchen Charm by Dinner4Two waterless greaseless cookware that lets me cook them on the stovetop with only a few tablespoons of water!
  2. Let sweet potatoes cool down to the point you can handle them. Add beans, flour, tahini, maple syrup (or agave), seasonings and ¼ cup of panko to sweet potatoes. Combine and mash ingredients together. I used the paddle attachment on my stand mixer. I think I mixed them a little too long- it was pure mashed potatoes and I would have preferred more chunks in my patties.
  3. Form the mixture into 10 patties. Add flour as needed until patties properly form. Coat in panko crumbs.
  4. In a skillet over medium heat add coconut oil, once melted add your patties and and cook on each side for 6 minutes. You want the panko to turn a golden color. Once done cooking transfer to a paper towel to drain some of the oil off.
  5. To serve put on hawaiian buns with cilantro, avocado & garlic aioli! Enjoy!
