Dairy-Free Banana Flax Muffins

These dairy-free banana flax muffins are made with baby cereal! Who would have thought?!

Our baby Ruby is 7 months old, 7 months!?! Although I haven’t slept through the night in ages I still can’t believe the time is moving so fast. I’m pretty sure one of our sleeping problems is that she is hungry and having such a hard time eating pureed food. I swear my other kids picked up the whole spoon into mouth thing so much quicker than she is. It’s be 3 months of her shoving everything out of her mouth with her cute little tongue, I know she needs more nutrition and I’m pretty sure the only answer is to keep trying several times a day and eventually she’ll get the hang of it. Ah! I like to mix pureed baby food with Gerber baby cereal’s to make them thicker and a little more vitamin rich.  I also find myself with extra cereal and it’s great to bake with! These dairy-free banana flax muffins are made with baby cereal! Who would have thought?!

What happens when all of the sudden your baby is a toddler and you have boxes of baby cereal left? I’m on my 3rd babe and I’m certain this situation will happen- it did with both my other kids! Instead of throwing it out, use it for cooking! These dairy-free banana flax muffins are delicious- my 5 year old made sure to tell me he loved them, and they use up 1 1/2 cups of baby cereal.

Dairy-free banana flax muffins that are delicious for breakfast or a quick snack.

Banana muffins that are easy to make and perfect for kids with dairy allergy

Delicious dairy free banana flax muffins are the perfect snack for someone with dairy allergy

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup Gerber Oatmeal Cereal
  • 1/2 cup Gerber Oatmeal & Banana Cereal
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • 1/4 cup ground flax seed
  • 1/2 tsp salt
  • 3 eggs
  • 2 over-ripe mashed bananas
  • 1 cup almond milk
Instructions:
  1. Preheat the oven to 350
  2. In the bowl of a stand mixer combine all your dry ingredients- flour, Gerber cereals, sugar, cinnamon, baking powder, flax & salt. Next add the eggs and bananas and mix until completely incorporated. Add the almond milk and mix until combined.
  3. Spoon about 1/4-1/3 cup into your muffin wells. You want each well to be about 3/4 full. Bake for 20-25 minutes. They are done when a toothpick inserted into the center comes out clean. Let cool and enjoy!
