I love chocolate, I’m pretty sure you do too. I mean really how many recipes are there on pinterest with the main ingredient as chocolate?! I personally love to have a little stash in my pantry for when my kids are driving me nuts. I go hide in the pantry and take a little moment to enjoy something dark and sweet and then come back out a little more ready to tackle the screaming/mess/disobedience, you get it, how many of you do it too? Well Dove’s newest creation- whole dried cranberries dipped in dark chocolate are perfect to snack on and recharge yourself or to use in dark chocolate recipes. You can buy them at Sam’s club, which means its a super large bag as is everything there, so you have plenty to share (if you dare) eat in your pantry and make the above delicious homemade granola bars with chocolate cranberries.
These puppies are so good, that big bag only lasted a few days in my house (ok I did have a party where I shared them, but we love chocolate). You can find them at Sam’s in the candy aisle, they are only available for a limited time. Dove will be releasing a whole cherry version later this year, so make sure to keep an eye out, I’m sure it will be just as good!
I had a craft party with some friends on Friday, more details in another post, but I had the Dove fruit on the tables and they were empty at the end. Everyone agreed they were delicious and a better for you snack than strait up candy!
So lets talk granola bars, these are super easy to make, no bake and delicious! I loved making them with my flexiflat by Demarle at Home, the entire thing came out so easy and then I cut them on a cutting board into bars.
I kept mine in a tupperware container after I made them but for a few I wrapped them in wax paper and tied with bakers twine, perfect to send to school with your kids or drop off with a friend. Give me a reason to use bakers twine and I will! 🙂
Granola Bars with Chocolate Cranberries
- 2 cups quick cooking oats (or pulse whole oats in a food processor for a few)
- 1 cup rice crispy cereal
- 1/4 cup shredded coconut
- 1/4 cup butter
- 1/4 cup honey
- 1/2 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1/2 cup Dove Fruit cranberries chopped
In a large mix bowl mix together the oats, cereal and coconut.
In a heavy bottom saucepan over medium high heat and melt the butter. Once the butter is melted add the honey, brown sugar and salt. You want it to come to a boil, it will start to be foamy as it boils, let it do this for a couple minutes and then remove from heat.
Pour the mixture over the oat mixture and mix until the oats are completely coated. Add in the Dove Fruit chocolate covered cranberries and mix until combined.
Press the mixture into a demarle at home flexiflat or a greased 9×13″ pan. Press in firmly and then let them cool in the fridge for 20 minutes.
