It may be September 2nd and I may totally be in the mood for fall to appear but this week its just not going to happen here in Missouri. Its still super hot yet they closed the pool, darn them! I’m pretty sure I devour more watermelons in a summer than most people. When I need a sweet refresher I always turn to my favorite fruit and so this week I’ll savor it while its still in the stores, ripe and fresh. This watermelon, peach and cucumber salad is such a great melding of flavors, unique and delicious -you should totally try it!
Most watermelon salads call for feta cheese, I’m a lover of pretty much all cheeses but I can’t stand feta. I think its the dry texture of it but it makes my skin crawl like nails on a chalkboard. yuck. So for this salad I added gorgonzola which has the perfect zing next to the sweet watermelon.
I’m also not a huge raw onion person so for me the shaved shallot was a little too strong, however my husband loved it. So take it or leave it, you decide.
Watermelon, Peach & Cucumber Salad

Blue Cheese Crumbles (i prefer gorgonzola)
Slices of Fresh Mozzarella
Balsamic Vinegar (really really good quality)
To assemble this salad you’ll want to cut your watermelon down the center and cut 1″ slices. Then take a cookie cutter and cut out rounds. My cookie cutter was 2.5″ diameter. Take a slice of mozzarella and place it on top of your watermelon. Then chop up your peach and cucumber into tiny squares to top the watermelon & mozzarella. Thinly slice your shallot and place a few slices on each round as well as the blue cheese, I probably put about 1 tablespoon on each round. The last step is to drizzle with a good quality balsamic vinegar. Serve and Enjoy! As you chop up the watermelon with your fork the juices drain onto the plate and everything starts to mix together and the flavors truly meld. Its delicious!
