Healthy eating, it’s such a good habit to get into! These quinoa patties with avocado sauce are the perfect summer dinner for making you feel full and healthy.  When I get into a habit of eating healthy food I just feel better all around.  The weekends are the hardest for me, which is funny because I work from home so it’s not like the weekend days are that much different! I do schedule my days better Monday thru Friday so that must be what makes the difference. I love quinoa, it’s super filling and amazingly healthy. “Quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.” So finding ways to put more Quinoa into my diet is a no-brainer!

I’m not gonna lie, making these quinoa cakes is tricky.  The mixing up and forming into patties is easy, of course. However the pan-frying them takes some stealthy maneuvering. The first 2 I put into my pan turned into a big fat mess. They still tasted good but they were no where near patty form, more like a plate of quinoa salad. ha!

I found two tricks to doing it correctly- First is to have a large spatula that can go under the entire patty.  Maybe make your patties smaller to fit your flipper.  Fish spatula’s work really well. These puppies are delicate like fish.This OXO Good Grips Fish Turner would be perfect!

The second trick is to push the patty down into the pan to compact it a little more.  Make sure your heat is up to medium-high so you get the nice browned crisp edges and only flip once. Trust me you don’t want to have to flip these things more than once.

That being said I love how they turned out. Such a pretty presentation with the avocado sauce and the arugula on top, don’t you agree?!

I also wish that I had diced my bell peppers smaller into tiny little dices. I feel like this would be the perfect dish to serve up houseguests this summer. Wow them with your quinoa cakes friends! 😉

Quinoa Patties with Avocado Sauce make a delicious meatless meal!

These quinoa patties are tricky to flip when frying so make sure to have a large spatula on hand. I also like to use coconut oil to pan fry them and get a nice golden brown on both sides.


These quinoa patties with avocado sauce are a delicious vegetarian dinner!


  • 2 cups cooked garlic quinoa
  • ½ cup small chopped red peppers
  • ½ cup small chopped green peppers
  • 2 eggs, lightly beaten
  • ¾ cup bread crumbs
  • 1 tsp black pepper
  • 1/4 tsp salt
  • 2 tbsp coconut oil
  • 1 cup arugula
  • 1 cup plain greek yogurt
  • 2 medium ripe avocados
  • 1 tsp fresh minced garlic
  • S & P to taste
  1. Cook quinoa according to package directions. Once quinoa is cooked place in a bowl, set aside and let cool.
  2. To make yogurt avocado sauce, add yogurt, avocados, garlic & S&P to a food processor or blender and mix until smooth. You want a nice creamy smooth sauce.
  3. To make the quinoa patties, combine the quinoa, bread crumbs, bell peppers, eggs, garlic, black pepper and salt. Thoroughly stir and form into 8 patties.
  4. In a large saute pan, turn heat to medium high, add coconut oil; let oil heat up and melt and then turn down the heat to medium. Add quinoa patties and cook on each side for 3 minutes, or until lightly golden. This step is tricky. These patties want to fall a part so make sure to have a large fish spatula that can slide under the entire patty. I found it helpful to press the top of the patty down into the pan while cooking to make it more compact. You will only want to flip once and then slide the patty out of the saute pan onto your plate.
  5. On a plate layer quinoa patty, Greek yogurt avocado sauce and arugula.
